Next Magazine - A Summer Salad

Can we all give three cheers, while waving aside that seemingly unending blanket of rain and finally welcome in the new season? I find this to be a wonderful salad for summer, incorporating the freshest vegetables available with the best herbs; it’s not just a usual slaw. Simply toss the ingredients together and bring to your next BBQ or an afternoon picnic in the park! Add the dressing into the mix just before serving so it doesn’t become as soggy as the spring that we endured. And do plan ahead for any number of invitations from those offering to help toss your salad!

Serves 4 - 6

Ingredients
2 red onions, with a nice dice
8 Persian cucumbers, or what you have on hand, quartered and sliced
4 vine-ripened tomatoes, coarsely chopped
½ cup basil, shredded
1 Tb fresh thyme, minced
1 Tb fresh oregano, minced
½ cup fresh parsley, finely chopped

Dressing
¼ cup lemon olive oil (or regular olive oil with a few sprays of lemon juice)
¼ cup red wine vinegar

Add sea salt and freshly ground pepper to taste

  1. Y'know? I was just thinking the other day (when I was up to my neck in lettuce and tomatoes) about how much I would love to have someone toss my salad.
