Recipes Of Our Mothers - Despina Gialouri's Tiropites

These Greek cheesey triangles make for a wonderful passed appetizer but I also suspect that when dusted with a little confectioner's sugar and omitting the pepper, they could also pass for a delicious dessert!

Despina Gialouri's Tiropites
Makes about 20

Ingredients
1/2 lb feta cheese, rinsed with cold water
5 heaping Tbs cottage cheese
1/2 stick margarine
1 egg
Sprinkle of pepper
Sprinkle of nutmeg
Filo dough (approximately 10 filo sheets cut in half = 20 sheets)

Method
Sprinkle pepper and nutmeg into feta cheese
Add cottage cheese
Add whole egg
Mix all together
In separate pot, melt margarine over low flame
Cut open filo dough, fold dough in half and cut with knife
Put filo on aluminum foil so that it doesn't dry out - cover with moist cloth
Take pastry brush and cookie sheet; with pastry brush, spread margarine all over cookie sheet
Take 1 sheet filo; fold over in thirds
Brush with margarine
Add 1 TB mixture onto triangles - fold through to end. Cut off excess filo dough
Start triangles from bottom right - upwards
Brush tiropites with margarine over top of them in pan. Put in oven at 375 degrees until they brown on top.
